This is an incredibly delicious vegetable soup, with a recipe i found originally here (in german).
It’s dead easy, and as long as you stick with the anise-ginger-orange part, it works with almost every combination of vegetables. For the soup in the pic I used a rather simple mix of carrots, potatoes, baby peas and zucchini. Parsnip, sweetheart cabbage and leek are also good additions.

Ingredients
Soup
- 1 Tbsp anise seed
- 5 cm ginger, finely chopped
- 2 Tbsp sun flower oil
Vegetables to taste, a possible combination:
- 3 carrots
- 3 potatoes
- 100g baby peas (can be frozen)
- 1 zucchini
- ... whatever else you like / is available
- 1.25 l vegetable stock (good instant is ok)
- 125 ml fresh orange juice
to serve
- 200 g smoked tofu
- 1 Tbsp sesame seeds
- 1 Tbsp sun flower oil
- 2 oranges
- good olive oil
- chopped parsley
- freshly ground black pepper

- a big pot
- wooden spoon
- knife
- chopping board
- a pan
Preparation Time
- 45 minutes
Instructions
Soup
- Wash, prepare and diece vegetables.
- Roast anise seed and ginger a few minutes in sun flower oil.
- Add diced vegetables, stew for a few minutes.
- Add vegetable stock, let it simmer at medium heat for 15 minutes (until vegetables are almost done).
- Add orange juice and let it simmer for another 5-10 minutes.
- Season with salt and pepper.
to serve
- cut tofu in small cubes
- fry tofu plus sesame seeds in sun flower oil for a few minutes
- cut oranges in segments/fillets
Serve soup topped with fried tofu, orange segments, chopped parsley, olive oil and freshly ground black pepper.
