Disclaimer: I did not yet test this noodle salad, since I found the recipe only two days ago. But it sounds so good to me (plus easy plus quick) that I guess I would try it at the camp.
Depending on the serving size, it could be a snack, main meal (or side for some grilled vegetables or meat?)

Ingredients
Dressing
- 20 g ginger
- 1 clove of garlic
- 1 fresh chili pepper
- 150 g Tahina (sesame paste)
- 100 g Peanut butter, creamy
- 50 ml soy sauce
- 2 Tbsp white vinegar or rice vinegar (I would substitute with lemon juice)
- 2 Tsp runny honey
- 120 ml warm water
Salad
- 500 g Spaghetti
- Salt, Pepper
- 1 Tbsp Sesame oil
- a bunch of green onions
- (half of) cucumber
- handful of peanuts
- optional: chili flakes
Equipment needed
- large pot
- strainer
- large bowl
- knife
- salad servers
- blender
Preparation Time
- 30 minutes
Instructions
- Peel and cut ginger finely. Dice chili pepper. Blend all ingredients for the dressing until smooth.
- Cook spaghetti al dente, strain and mix with sesame oil (to avoid sticking).
- Prepare green onions, cut in small slices.
- Peel cucumber, remove the core and dice.
- Chop peanuts.
- Toss dressing over spaghetti and mix well, then add green onions, cucumber and peanuts.
Can be served with additional chili flakes on top.
