Manual for Frischkornbrei (i.e. Müsli)

Seeds and grains contain most of the important vitamins and micro-elements that the human body needs. One bowl of this preparation will cover around 70% of your daily needs. A typical serving portion covering this balance would include three (3) spoons of müsli covered with lots of fruit...

This recipe is for up to 10 bowls

  • Time necessary for preparation

- 10 min of active time for preparation of new batch (5-12 hours of watering time)

- 20 min for preparing a consumable bowl

Preparing the grains

A grain contains lots of vital elements that unleash their power in contact with water. The grain should be kept in whole as long as possible and only grounded just before consumption. For grounding you'll need a preferably stone based house mill which should be set to the widest opening possible.

Grind about 50 grams of grains, where grain refers to your choice, for example wheat or spelt.

Cover it with water (i.e. the grains must just be covered with water) and let it soak at least 5 hours (better overnight) covered with a kitchen cloth.

Other ingredients

Fresh fruit should be chosen as season allows. When it comes to choosing the fruit, only your taste is bounding. Here's an example :

  • 1 banana
  • 5 strawberries
  • some melon
  • 1/2 lemon (juice)

The only "basic" fruit would be an apple. We'll need one (1) apple for this recipe.

  • sweet cream (or whipped cream), preferably no UHT but fresh
  • some nuts (walnuts, etc)

Equipment

  • Home grounder (pref. with stone grounds)
  • large bowl for soaking grains
  • small bowls for serving
  • spoons

Working manual

  • Ground the grains an let them rest for 5-12 hours in a ambient tempered place (not too hot)
  • Grater half of the apple
  • Puree the banana and add to the apple
  • Pour the lemon juice over the prepared fruits
  • Mix good and add to the soaked grains (do not remove the water from the grains)
  • Now cut the rest of the fruits in small eatable pieces and add to the müsli
  • Crush some nuts and add them as well.
  • Whip some cream (50 grams) and fold it inside the müsli mix.
  • Enjoy!

For diabetics, I would recommend not using a banana in the müsli mix. One bowl of müsli containing "normal" fruit (i.e. no banana) is 2BEs. As the sugar inside this recipe is natural, you should see no huge up and downs in your blood sugar.

Some tips

  • If you don't get access to a grounding mill, just water the whole grain. The delay of watering must then be 12 hours, you'll see the success when the grain starts popping out some "tentacles".
  • You can also use the sweet cream directly without whipping it. The müsli becomes more watery but tastes as good.
