- Workshop Leader - Frantisek Algoldor Apfelbeck
This workshop is going to be continues, happening every day (except Thursday 11th) as a part of the Probiotic beverages project. The goal is to teach people to brew the drinks which they like so they can do it at home, promote it and even to start their own business if they like.
I'm a brewing for several years now, focusing on non alcoholic probiotic beverages, which are my passion. We will be working with kombucha, yogurt, kefir and water kefir cultures brewing beverages like ginger ale, kombucha, honey cooler etc. using partly the recipes above, however experimenting quite a bit too. We will make sure that the cultures which we are going to use are going to be handled well and they will be shared with anyone interested.
This workshop is donation based, so any form of support is welcomed, financial included. I'm planing to keep the ingredients cost within 5-10 EU. No one is going to be turned away. The outcome of the workshop will be partly split with the Food Hacking Base project and partly dedicated to my food&beverage hacking trip to Japan which I plan to do later on this year. The workshop will take around 2-3 hours and you do not have to stay for all of it, but it's recommended. There will be plenty of tasting and you are expected to take away with you at least part of the brew which you prepare.

- Friday 12th - starting around 16:00 we will be brewing a kvass under the supervision of Alex, Russian brewer and later we will harvest a ginger ale and prepare a new batch (water kefir culture). The workshop is donation based, it would be cool to get some 5 EU or more per participant to cover the costs but no one will be turn away, that is for sure.
Well we have done the workshop and it was really nice. We have started a new brew of kvass under Alex's supervision with tasting and Frantisek made harvested ginger ale and new batch of water kefir based honey drink. The workshop was success and we are going to continue with a new staff tomorrow.
- Saturday 13th - This workshops starting around 16:00 will be dedicated to kombucha brewing both in theory and practice. Alex will prepare a different version of kvass and we will be also doing a simple kefir/yogurt ferment and we may find some time to brew kombucha. You can take all the ferments home with you. The workshop is donation based, it would be cool to get some 5 EU or more per participant to cover the costs but no one will be turn away, that is for sure.
