Peanut-noodles with sesame-sauce (salad/snack, vegetarian, lactose-free)

Disclaimer: I did not yet test this noodle salad, since I found the recipe only two days ago. But it sounds so good to me (plus easy plus quick) that I guess I would try it at the camp.

Depending on the serving size, it could be a snack, main meal (or side for some grilled vegetables or meat?)

Ingredients

Dressing

  • 20 g ginger
  • 1 clove of garlic
  • 1 fresh chili pepper
  • 150 g Tahina (sesame paste)
  • 100 g Peanut butter, creamy
  • 50 ml soy sauce
  • 2 Tbsp white vinegar or rice vinegar (I would substitute with lemon juice)
  • 2 Tsp runny honey
  • 120 ml warm water

Salad

  • 500 g Spaghetti
  • Salt, Pepper
  • 1 Tbsp Sesame oil
  • a bunch of green onions
  • (half of) cucumber
  • handful of peanuts
  • optional: chili flakes

Equipment needed

  • large pot
  • strainer
  • large bowl
  • knife
  • salad servers
  • blender

Preparation Time

  • 30 minutes

Instructions

  1. Peel and cut ginger finely. Dice chili pepper. Blend all ingredients for the dressing until smooth.
  2. Cook spaghetti al dente, strain and mix with sesame oil (to avoid sticking).
  3. Prepare green onions, cut in small slices.
  4. Peel cucumber, remove the core and dice.
  5. Chop peanuts.
  6. Toss dressing over spaghetti and mix well, then add green onions, cucumber and peanuts.

Can be served with additional chili flakes on top.
