Breath of the Coyote (spread, vegetarian, Czech Republic, Family Recipe prepared by Frantisek Algoldor Apfelbeck)

Note

This recipe is very common in Czech Republic. The best ingredients would be strong cheese of cheddar quality, fresh garlic, good mayonnaise and sea salt with fresh lemon or lime for flavouring. The spread should be prepared a day or two in advance or at least several hours before eating to let it mature.


Ingredients:


200 g of graded sharp cheese (Cheddar for example)

70 g of mayonnaise

3-6 cloves of garlic

10 drops of lemon (less than 5 ml)

pinch of sea salt (less than 5 g)

French loaf (baguette) (or any other light bread)


Cookware needed:


grader for cheese

grader for garlic or preferably garlic press

bowl

cooking spoon


Directions:


- grade the cheese on a fine grader in to the bowl

- crush the garlic on a past on a fine grader (or crash it) and add to the bowl

- add the mayonnaise to the cheese and garlic and mix well

- taste and add the lemon and salt as needed, mix well

- serve on thin slice of French loaf (7 mm = 1/8 of inch)
